The white artichoke is one of the most unusual varieties of artichoke on the peninsula. It is a very light-colored artichoke and there are numerous characteristics that make it versatile. The artichoke in oil goes with everything; ideal to serve as an appetizer, as an aperitif or side dish, also excellent for the preparation of bruschetta. The aroma is intense, the consistency is fleshy and tender and at the same time crunchy; with the addition of thyme and lemon peel the right balance between acidity and sweetness is created.
