A cheese selected personally by Mr. Copelli in an artisan and historical dairy located in the Tuscan Maremma. With pasteurized sheep’s milk and hard paste, it has a brown crust - not edible - the taste is strong and fragrant. The maturation of this cheese takes place in a cave, from which the name.
