Salva Cremasco Dop

Descrizione

Cheese produced in the cremasco area, in the lower province of Bergamo and in the Brescia plain, is dry and friable, with a raw paste of white, slightly straw-like colour, with a consistent crust of hazelnut. The taste is aromatic and fragrant. Its name comes from the traditional use of saving milk from abundant spring production, using it in the production of a type of cheese to be preserved even beyond the summer.
