A hard cheese made with pasteurized cow’s milk: it is yellowish colour with slight purple veins on the surface; The rind is smooth and not edible but very fragrant; The taste is intense and vinous but not spicy. Produced with milk from Austrian alpine pastures, it is then aged in wine in Italy.
