Capreggio

Descrizione

Goat’s milk cheese, produced in the province of Bergamo, in Lombardy. The cheese has an interesting and unusual rectangular shape. On the outside, the thin crust is pinkish and dry. On the inside, due to the prolonged aging, the paste is white, creamy but compact. The rind is thin, yellow brown in color. The taste is sweet, not very pronounced, melting in the mouth.
